Dirty Rice


2 tablespoons oil
4 tablespoons flour
2 medium onions, chopped
1 large clove pressed garlic
1 bell pepper, chopped
1 cup celery, chopped
Bouillon cube
2 cups cooked rice
½ lb. ground beef
½ lb. lean ground pork
1 lb. raw chicken giblets
Few dashes of Tabasco and Worcestershire
Salt, black and red pepper to taste


Cook oil and flour over medium heat until flour is well browned, stirring constantly. Add onion, bell pepper and celery. Cook until slightly wilted.

Add ground meats and giblets. Cook over medium-high heat until meats are cooked through and slightly browned. Add enough water, in which a bouillon cube has been dissolved, to make the mixture the consistency of a thick gravy.

Add the garlic, a few dashes of Worcestershire and Tabasco. Season to taste with salt, red and black pepper.

Cook slowly for about 30 minutes to let the seasonings blend but do not allow the mixture to become too thick or dry. Mix with cooked rice. Add more or less rice to suit your tastes.
