Creole Pralines

INGREDIENTS:

2 cups sugar
1 cup brown sugar
1 stick butter
2 5-oz. cans evaporated milk
2 tbsp. Karo syrup
4 cups pecans
2 tsp. vanilla

DIRECTIONS:

1. Combine 2 cups sugar, 1 cup brown sugar, 1 stick butter, 2 5-oz. cans evaporated milk, and 2 tbsp. Karo syrup. Bring to a boil. Cook, stirring constantly, until mixture reaches 225 degrees or about 20 minutes after boiling starts.

2. Add 4 cups pecans. Cook, stirring constantly, until mixture reaches soft boil stage (236 degrees).

3. Remove from heat; add 2 tsp. vanilla. Beat well and drop by tablespoonfuls onto waxed paper.

4. Let stand until firm. Store in an airtight container.
