Crawfish Jambalaya


1 cup cooked rice
1/4 cup oil
2 tsp. minced garlic
1 large onion, chopped
2 stalks celery, chopped
1 small bell pepper, chopped
1 bunch green onions, chopped
2 tbsp. chopped parsley
1/2 cup chicken broth
1 lb. cooked and peeled crawfish
salt & pepper to taste


In a large skillet, saute in 1/4 cup oil, 2 tsp. minced garlic, 1 chopped large onion, 2 stalks chopped celery, 1 chopped small bell pepper, 1 bunch chopped green onions, and 2 tbsp. chopped parsley. Add 1/2 cup chicken broth and 1 lb. cooked crawfish. Cooked until heated through. Fold in 1 cup cooked rice. Add salt and pepper to taste.
