Crawfish Dressing


4 tbsp. butter
1 large onion, chopped
1 lb. Louisiana crawfish tails
4 green onions, finely chopped
2 tbsp. parsley, finely chopped
1 tbsp. garlic, minced
1 pt. heavy whipping cream
1/2 tsp. salt
1/2 tsp. black pepper
1/4 tsp. red pepper
50 butter-flavored crackers, finely crushed


Melt butter in saucepan. Add onions and cook until transparent.

Add crawfish, green onions, parsley and garlic. Stir well and cook 5 minutes.

Add heavy cream, salt, black pepper and red pepper. Reserve 1/2 cup of cracker crumbs. Add the rest to the mixture.

Pour into a greased baking dish and top with reserved cracker crumbs.

Bake at 375 degrees F for 25 minutes.
