Crab Meat Casserole


1 cup chopped onions
1/2 cup chopped bell pepper
1/2 cup chopped celery
2 cloves garlic, minced
2 tbsp. vegetable oil
3 eggs, beaten
8 oz. evaporated milk
Salt and pepper to taste
1/2 tsp. Worcestershire sauce
6 slices bread, diced
1/4 cup chopped green onions
1/4 cup chopped parsley
1 lb. Louisiana crab meat
1/2 cup bread crumbs
1/4 cup melted butter


In saucepan, saute onions, bell pepper, celery, and garlic in oil until soft.

Beat eggs and add milk, salt and pepper, Worcestershire sauce and bread. Stir until well absorbed and mushy.

Add sauteed vegetables, green onions and parsley. Mix well. Gently fold in crab meat.

Pour into 13-inch lightly greased casserole dish, sprinkle with bread crumbs and drizzle with melted butter.

Bake at 350 degrees F for 20 to 30 minutes until done in center.
