Crab Casserole


2 cups heavy cream
2 tbsp. melted butter
3/4 cup mayonnaise
2 tsp. salt
2 tbsp. minced parsley
1 lb. Louisiana crab meat
2 cups bread crumbs
4 hard-boiled eggs, chopped
1 tbsp. chopped green onions
1/2 tsp. hot sauce
Extra butter


In a heavy saucepan, combine heavy cream, butter, mayonnaise, and salt. Cook over low heat, stirring constantly for 5 minutes.

In a bowl combine parsley, crab meat and bread crumbs. Toss to blend. Add the hot cream mixture and blend together. Stir in eggs, green onions, and hot sauce. Season to taste.

Pour into buttered 2-quart casserole. Bake at 350 degrees F for 20 minutes.

Remove from oven and dot top of casserole with extra butter. Slip under broiler for a minute to brown.
