Chicken Stew


1 – 6 lb. chicken, cut up
1 tablespoon oil
2 tablespoons flour
3 onions, finely chopped
4 cups water
Salt and pepper to taste
¼ cup chopped green onions
¼ cup chopped parsley


In heavy bottomed pot, brown chicken which has been seasoned with salt and pepper in oil; remove from pot.

Put flour in pot and stir until brown. Add onions and cook until tender. Add chicken and water. Add more salt and pepper to stew if needed.

Simmer about 1 hour or until tender, stirring occasionally to prevent sticking. During the last 5 minutes of cooking, add green onions and parsley.

Serve over hot Louisiana rice .
