Chicken & Sausage File' Gumbo

1/3 cup oil
1/2 cup flour
2 medium onions, chopped
1 bell pepper, chopped
3 ribs celery, chopped
1 lb. smoked sausage, sliced
1-1/2 lb. chicken, cut in pieces and seasoned with salt, pepper, and cayenne
1-3 teaspoons file’


Make roux with oil and flour.  

Cook down onions, bell pepper, celery, and chicken about 30 minutes, stirring occasionally.  Add smoked sausage and 6 cups of water.  Bring to a boil.

Lower heat and simmer for at least one hour or more.  Add salt and pepper to taste.

Take off heat and add file' to thicken.

Leave file' on table so each can add to their plate as desired.
