Chicken Giblet Rice Dressing


1 ½ cup oil
1 cup flour
2 lbs. ground chicken giblets
1 lb. ground beef
2 cups chopped onions
1 cup chopped celery
½ cup diced bell pepper
2 cloves garlic, minced
6 cups cooked rice
½ cup finely chopped green onion tops
½ cup finely chopped parsley
Salt, black pepper, and cayenne to taste


In heavy pot make roux with 1 cup oil and 1 cup flour. Season giblets generously with salt, pepper and cayenne. Add to roux, giblets, onions, celery, bell pepper, garlic, and ½ cup cooking oil. Cook in uncovered pot over low heat, stirring frequently.

In another pot, brown the ground meat. Season with salt, pepper, and cayenne. Add ground meat to giblet mixture. Cook over low heat for 2 hours, stirring occasionally. It will form a heavy gravy. Add green onion tops, parsley, and cooked rice.
