Chicken and Sausage Gumbo


5 lb. chicken, cut into pieces
Cajun seasoning
4 tbsp. vegetable oil
4 tbsp. flour
2 large onions, chopped
2 stalks celery, chopped
1 bell pepper, chopped
4 cloves garlic, minced
1 lb. smoked sausage, sliced
3 qt. water
3 tbsp. green onions, chopped
3 tbsp. parsley, chopped


Season chicken pieces with Cajun seasoning to taste. In a large, heavy-bottomed pot, add oil and flour to make a dark roux, stirring continuously. Add onions, celery, bell pepper, and garlic. Cook until vegetables begin to wilt.

Slowly add water, stirring to dissolve roux. Add chicken and smoked sausage. Bring to a boil and simmer 1-1/2 to 2 hours or until meat is tender.

Add green onions and parsley 5 minutes before done.

Serve with rice in soup bowls.
