Cathy's Crabmeat au Gratin

INGREDIENTS:


1 large onion, chopped
2 ribs celery, chopped
1 stick butter
4 tbsp. flour
1 large can evaporated milk
1 small can evaporated milk
2 egg yolks
1 lb. crabmeat
grated cheese

DIRECTIONS:

Saute onions and celery in butter. Add flour and blend. Blend in milk. Cook until thick. Remove from heat, add egg yolks, crabmeat, salt and pepper, to taste, and grated cheese. Transfer to buttered casserole dish and top with grated cheese. Bake at 350 degrees for 15-20 minutes or until cheese is melted. Add bread crumbs on top.
