Cajun Rice

INGREDIENTS:

1 small onion, chopped
1 cup chopped bell pepper
1 cup chopped celery
1/4 cup vegetable oil
2 cups uncooked rice
1 lb. Cajun sausage
1 14-1/2 oz. can chicken broth

DIRECTIONS:

Saute onion, bell pepper, and celery in oil until wilted. Add chopped sausage and cook until tender.

Add uncooked rice and allow to brown for 5 minutes. Stir frequently.

Add chicken broth and bring to a boil. Cover and cook on medium-low heat for about 20 minutes.
