Cajun Casserole

INGREDIENTS:

1 cup chopped bell pepper
1 cup chopped onion
1 cup chopped celery
1 stick butter
3 cloves garlic, minced
1 small can sliced mushrooms, drained
1/2 tsp. pepper
1 10-oz. can cream of mushroom soup
2 cups cooked rice
1/2 cup chopped green onions
1/2 cup chopped parsley
3 cups peeled Louisiana shrimp or Louisiana crawfish

DIRECTIONS:

In saucepan, melt butter and saute bell pepper, onion, celery and garlic until wilted. Remove from heat. Add remaining ingredients and mix well.

Pour into greased 3-quart casserole dish. Bake at 350 degrees F for 45 minutes.
