Cabbage Casserole


1 medium cabbage, washed and chopped
3 tbsp. vegetable oil
1 tbsp. salt
1 tsp. pepper
2 lb. lean ground beef
1 medium onion, chopped
1 tbsp. chopped garlic
1 tbsp. Cajun seasoning
1 21-oz. can cream of mushroom soup
1 32-oz. Ro-tel tomatoes
6 cups cooked rice
1 lb. shredded cheddar cheese


In a large pot, brown cabbage with oil, salt and pepper.

Add ground beef, onion, garlic, Cajun seasoning, soup and tomatoes. Cook for about 20 minutes on medium heat.

Remove from heat. Mix in rice and place in 3-quart casserole dish. Top with cheese.

Bake at 400 degrees F until cheese is melted and lightly browned.
