Butter Beans

INGREDIENTS:

1/3 cup oil
1/3 cup flour
1 large onion, chopped
Fresh butter beans
1 tablespoon sugar
Salt and pepper to taste

DIRECTIONS:

Make a light to medium roux with oil and flour.

Saute onion until tender.

Add beans and about 2 cups of water and bring to boil. Lower heat, cover and simmer until beans are tender. Stir often and add water as necessary.

Add 1 tablespoon sugar and salt and pepper to taste.
