Buddy's Crawfish Etouffee

1/2 stick salted butter (1/4 cup)
1/4 cup canola oil
1/2 cup flour
2 cups chopped onions
1/2 cup chopped bell pepper
1 cup chopped celery
1 tbsp. chopped garlic
1 can Rotel tomatoes
1 can cream of mushroom soup
1 cup water
2 tsp. seafood base
1 lb. crawfish tails
1/2 cup chopped green onions
2 tbsp. chopped parsley
1 lemon, juiced
Buddy’s Cajun Spice to taste
(Since Buddy’s is lower in sodium, you may add additional salt if so desired)


Make a light butter roux with the flour, butter and olive oil. Add onions, bell pepper, celery and garlic and simmer until tender. Add cream of mushroom soup, Rotel tomatoes and Buddy's Cajun Spice. Cover and cook on low for 30 minutes. Add crawfish, green onions, parsley, and lemon juice and cook covered for another 15 minutes. Adjust seasoning with additional Buddy's Cajun Spice to taste.

Serve over rice.
