Broccoli Rice Casserole


¾ cup rice
3 tablespoons butter
2 boxes frozen, chopped broccoli
1 can cream of chicken soup
½ of soup can milk
1 small jar Cheez Whiz
1 cup chopped onion
1 cup chopped celery
Salt and pepper to taste


Cook rice. While broccoli is thawing in 1 cup of water that has been brought to a boil, sauté onion and celery in butter. Add soup and milk, then add Cheez Whiz. Simmer for a minute or so, then add thawed and drained broccoli, rice, and salt and pepper to taste.

Put in casserole dish. Bake for 30-40 minutes at 375 degrees.

Recipe can be made ahead of time and put in refrigerator until ready to bake.
