Blueberry Dumplings


1 cup flour
1 tsp. + 1-1/2 cup sugar
1 tsp. baking powder
Pinch salt
1/2 cup butter, softened
4 tbsp. milk
1 qt. fresh or frozen blueberries
2 cups water
Vanilla ice cream for serving


Combine flour, 1 tsp. sugar, baking powder and salt in a bowl. Cut in butter. Add milk to form dough.

In saucepan, add berries, 1-1/2 cup sugar, and water. Bring to a boil. Drop dumplings into saucepan by tablespoons. Cover, reduce heat and cook slowly for 20 to 30 minutes. Don't remove cover for at least 20 minutes.
