Banana Nut Bread


1 stick butter
1 cup sugar
2 large ripe bananas, well mashed
1 tablespoon baking soda
2 tablespoons hot water
2 eggs, slightly beaten
1 teaspoon lemon juice
½ cup chopped pecans
2 cups flour


Cream sugar and butter until light and fluffy in mixing bowl. Add bananas.

Dissolve baking soda in hot water and add to mixture. Add eggs, lemon juice, pecans, and flour to creamed mixture. Stir just enough to combine ingredients.

Pour batter into wax paper-lined loaf pan. Bake at 350 degrees for 1 hour. Remove bread from pan and peel off paper.
