Baked Catfish

INGREDIENTS:

2 catfish fillets
Italian dressing
Butter
Lemon juice
Cajun seasoning
2 lb. shrimp
Onions
Bell pepper

DIRECTIONS:

Put fillets in glass dish. Spread butter over fish. Add lemon juice and douse with Italian dressing, leaving some dressing on the bottom of the dish to help cook the fish and so that the dressing can really get into the fish while cooking. Season to taste. Put fish in oven (uncovered) and bake at 350 degrees for 45 minutes.

While fish is baking, season shrimp with Cajun seasoning. Saute shrimp, onions, and bell peppers in butter. After fish has baked for 45 minutes, take out of oven, top fish with sauteed shrimp mixture and bake an additional 15 minutes or until the fish is tender and pulls apart easily. (Bake covered) The fish will brown and begin to curl on edges when done.

Serve over rice or pasta.
