Aunt Lovina’s Eggplant Cake

INGREDIENTS:

3 cups eggplant
2 eggs
2 ½ cups sugar
2 tablespoons vanilla
¼ cup butter
¼ cup milk
1 cup flour
¼ teaspoon baking soda
1 teaspoon baking powder

DIRECTIONS:

Boil eggplant, drain, and mash. Mix all ingredients together.

Pour in baking pan with wax paper fitted in the bottom. Batter should be about ¼ inch thick.

Bake at 350 degrees until done.
