Applesauce Ginger Cupcakes


1/3 cup shortening
1/3 cup sugar
½ cup molasses
1 ¾ cups sifted flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ginger
1 teaspoon cinnamon
1 egg
2/3 cup applesauce


Cream shortening and sugar. Beat in molasses.

Sift together flour, baking powder, baking soda, salt, ginger and cinnamon. Add 1/3 of sifted ingredients to molasses mixture. Add egg and beat well. Add remaining sifted ingredients alternately with applesauce.

Bake in greased muffin tin at 350 degrees for about 25 minutes.

To serve, split cupcakes and fill with softened cream cheese and put halves back together.
