Apple Cake


1 ¾ cups sugar
1 stick butter
2 eggs
4 cups apples, diced
2 ½ cups flour
2 teaspoons baking soda
½ teaspoon cinnamon
½ teaspoon salt
¾ cup nuts (optional)


Cream butter and sugar. Add eggs and mix well. Stir in diced apples.

Sift together flour, baking soda, cinnamon, and salt. Fold this, and nuts, into apple mixture.

Pour mixture into greased 1 ½-quart pan. Bake at 350 degrees for 50-60 minutes, if using a metal pan. Bake at 325 degrees for 55 minutes if using a glass pan.
