Abbeville Oysters


¾ cup oil
4 heaping tablespoons flour
2 large onions, chopped
2 quarts oysters, chopped or cut up, reserve liquid
2 tablespoons Worcestershire sauce
Dash of Tabasco
Salt and pepper to taste
2 large cans mushrooms
6 green onion tops, chopped
½ cup chopped parsley
1 bell pepper, chopped
About 2/3 loaf of bread
Bread crumbs for topping
Pats of butter


Make a roux with oil and flour. Add onions and cook until wilted.

Add about 5 or 6 cups of water to this, including your oyster liquid, salt, pepper, Worcestershire sauce and a dash of Tabasco. Add oysters, mushrooms, green onions, parsley, and bell pepper.

Heat this up about 10 minutes. Add loaf of bread, breaking it up fine.

Put mixture in baking dish (you can use individual serving size dishes) and top with bread crumbs, adding pats of butter.

Bake about 30 minutes at 350 degrees.
