Vieux Carre (voo ca-ray) – “Old Square”.  Another name for French Quarter.

Yam – a sweet potato like vegetable, but usually sweeter.  Opelousas is “Yam Capital of the World.”  Recipe:  Mary’s Yams

Zydeco (zi-de-co) – A relatively new kind of Cajun dance music that is usually played on accordion, guitar and violin and combines traditional French melodies with Caribbean and blues influences.
