Tarte a la bouille (tot a la boo-ee) – A traditional Cajun custard pie made with a soft, sweet dough. Recipe:  Dot’s Tarte a la’ Bouille

Tasso (tah-soh) – Strips of spiced pork or beef which are smoked like jerky and used for seasoning dishes like jambalaya, gumbos, and red beans.

Tete dur (tet dur) – “hard head”.  What many little Cajun children are called by their parents.

The Cajun Bahamas – Grand Isle.

Throws – The beads, cups and other trinkets thrown from floats during Mardi Gras parades.

Tooloulou – fiddler crab.
