Cajun Dictionary – M

 

Mais (may) – “but.”

Maque Choux (mock-shoo) – A Cajun dish of smothered corn, tomatoes, onions and peppers.  Sometimes shrimp or crawfish are added to make a main dish.  Recipe:  Crawfish Corn Maque Choux

Mardi Gras – “Fat Tuesday” – The day before Ash Wednesday, the first day of the Roman Catholic season of Lent.  Fat Tuesday is the last day for indulgence and festivity before the 40 days of sacrifice during Lent.

Meat Pie – a turnover filled with seasoned ground meat.

Mirliton (MEL-e-taun) – Another name for vegetable pear or chayote squash.  A popular Cajun vegetable that is often stuffed with shrimp or other meat or seafood dressing or made into a seafood or meat casserole.  Recipe:  Shrimp Stuffed Mirliton

Mudbugs – crawfish.

Muffuletta (moof-a-LOT-ta) – A New Orleans Italian specialty sandwich, usually on a seeded round bread, stuffed with ham, salami, cheese and an olive salad made of  chopped olives, garlic, onions, celery, and olive oil.
