Dirty Rice (or Rice Dressing) –  A substantial Cajun dish made with rice, ground meat and/or chicken, sometimes liver and giblets, seasonings and spices.  Recipe:  Dirty Rice

Dressed – When referring to a sandwich or Po Boy, this means you want your sandwich to come with mayonnaise, lettuce, tomato and pickle.

Etouffee (ay-too-fay) – Cajun term for smothered meat or seafood, cooked either with a roux or tomato-based sauce, and onions, celery, bell peppers and other seasonings and spices.  Served over rice.   Recipe:  Shrimp Etouffee
